Gelling agent and stabiliser

Celluzoon® contains a cellulose derivative (E 460 - 466), which is obtained from plant fibres and then customised for its application purposes. By contrast to other hydrocolloids and food gums, Celluzoon® is only soluble in hot liquids and has to be completely dissolved to reach its full functionality (e.g. gelling or film-building). A fully dissolved and therefore "ready-to-use" Celluzoon® solution is clear and transparent (unless the liquid base used is turbid). Therefore turbid liquids should be refrigerated over night and carefully stirred before use. In general, most cellulose derivate types can be easily mixed with liquids (juices, stocks, reductions etc.) by using a hand blender at low speed (caution: the liquid will otherwise foam instantly) and then kept cold until used. To avoid lumps forming in types of cellulose derivatives with strong water-binding properties, the powder can first be mixed with a small amount of hot liquid and then stirred into the rest of the liquid base at room temperature before being cooled and used as above. Celluzoon® tolerates high salt/ion contents as well as a wide pH range.

Fields of Applications:

  • Foam formation and stabilisation;
  • Formation of brittle films;Upon heating of prepared cellulose solutions in a water bath or in the microwave, hot jellies are produced which will melt upon cooling or in the mouth.
Application example:
Cold preparation of foams

Dissolve 6 flattened spoons of Celluzoon® into 110 ml of hot water, let it cool while stirring and store it over night.Mix 25 ml of Celluzoon® with 175 ml of liquid (broth, juice, etc.) and add 6 flattened spoons of Xanthazoon®. Stir the mixture at the highest speed. The result is an airy and original presentation of dishes and food-tasting samples.
